Fall Chicken Tortilla Soup Recipe

This is a wonderfully delicious and easy recipe that is perfect for the cooler temperatures!

Ingredients...

2 cans of chicken broth
2 cans of stewed tomatoes, chopped
1 garlic clove
1 T cumin (we prefer 2 or 3)
1 can of black beans rinsed and drained
1 can of salsa (we prefer southwestern style)
salt, black pepper & cayenne pepper to taste (we like a lot!)
2 cooked chicken breast cut into pieces or shredded
a sprinkle of olive oil
1/4 c sour cream

to top...
tortilla strips
shredded cheese
cilantro

Directions...

Cook the chicken and allow to slightly cool off before shredding. Mix all ingredients in a large pot and bring to a boil. Turn it down to a simmer for about 15 minutes to let the flavors marry. Top with tortilla strips, shredded cheese, cilantro and more sour cream if you like and enjoy!
